Arroz imperial with Maduros is a delicious Cuban-style chicken and rice dish layered with creamy cheese and topped with savory ham ,then served with sweet plantains.It’s comforting ,flavorful and perfect for a family meal or a special occasion.
Ingredients
- 3 cups of pre boiled rice
- 1 pound of any chicken with bone
- 2 pounds of chicken breast
- 1 lb ham , chopped
- 3 cups shredded mozzarella ( freshly grated preferably)
- 2 cups of mayonnaise
- 1 onion
- 3 gloves of garlic
- 1 tbsp
- oregano
- 1 tsp cumin
- 2 bay leafs
- salt
- complete seasoning
- sazòn Goya ( for coloring )
- chicken bouillon
- 4-5 ripe plantains
- oil ( for frying plantains )
- 1 cup of ragu sauce
- 1 can of peas and carrots
Instructions
Then add these steps as numbered list :
- Make a stock , bring to boil the chicken , bay leaf’s, oregano and chicken bouillon.
- Once chicken is fully cooked, shred.
- Sauté chopped onions and garlic , cook until softened.
- Add chicken , ragu , complete seasoning cumin and stir for about 5 min.
- Rinse 3 cups of rice and add 4 cups of chicken stock that was prepared.Add sazon goya with drained peas and carrots along with salt to taste
- In a safe oven dish, brush with mayonnaise add one layer of rice then spread a thin coat of mayonnaise on top of rice ,evenly spread cheese and shredded chicken.
- Repeat layer, rice , mayo ,chicken , generous amount of cheese then top with shredded ham (optional)
- Bake at 375 F for about 20 -25 minutes, or until hot and cheese is melted and lightly golden.
- While imperial rice bakes , peel and slice ripe plantains ,fry them in oil until golden brown on both sides.
- Serve imperial rice warm with sweet Maduros on the side.
